Can Frozen Fish Be Inspirational?

Last night was one of those evenings.  You know the type - nothing planned for dinner, you're tired and worn out, don't want to spend the time or money to go out to eat, but still want something tasty, hearty, and - oh, yeah! - simple.  Good luck, right?  Well, thankfully I had been grocery shopping a few days earlier so the fridge and pantry were well-stocked.  I had a bag of frozen cod fillets that had been in the freezer for awhile, and remembered seeing a recipe that looked tasty in a book I had read recently.  So, out came the cod and I spent less than 10 minutes prepping for a dish that turned out to be one of the tastiest that I have had in some time!

It looks so fancy, and yet it was practically effortless. 
A little slicing here and there, and stirring during the cook time, and within 45 minutes we had a beautiful, healthy, indulgent-tasting meal.  The fish was tender and flaky, the veggies perfect, the sauce rich and succulent... Can you tell I enjoyed it?!  This one is absolutely going on my regular rotation - such an amazing way to utilize frozen fish!  So, without any further gushing, here it is:

Mediterranean Skillet Cod

1 T extra virgin olive oil
1 white or yellow onion, thinly sliced
3 cloves garlic, minced
pinch of salt
pinch of pepper
1 jar sun-dried tomatoes, well drained and thinly sliced
1 yellow bell pepper, thinly sliced
1/4 c white wine (or additional chicken broth)
1/2 -1 c chicken broth
1 lb cod fillets, thawed

*In a large skillet, heat the olive oil over medium heat.  Add the onion, garlic, salt and pepper.  Cook for 10 minutes, stirring occasionally.

*Add the tomatoes and bell pepper.  Cook for 10 minutes, stirring occasionally.

*De-glaze the pan with the white wine.  In other words, pour it straight into the skillet and stir everything around for a minute or two.  The wine (or broth) will pull all the lovely flavored bits up off the skillet, and work them back into the sauce.  Then add the chicken broth, using more or less, as you like.

*Nestle the cod fillets into the sauce, and spoon some sauce over them.  Cover, and simmer for 10 minutes or until fish flakes when forked.
