One Potato, Two Potato...


... and fifty pounds more!  Yep, that's right.  This week I came into fifty pounds of russet potatoes, thanks to a surplus after the church's food bank distribution day.  Today, we were finally able to deal with all of them.  

I'm not a fan of canned potatoes, so although a friend of mine processed and canned around a dozen quarts, that just doesn't appeal to me.  Besides, I'm running out of space for jars (we've got to get some shelves built in the garage...)!  I decided to pull out my favorite potato recipes, go ahead and slice the potatoes as required for the recipes, then simply freeze them.  I didn't cook them ahead of time, although for some of the dishes I certainly could have.  I also didn't add any of the other ingredients, as I couldn't get all of the groceries I would need right now.  The potatoes were simply cleaned, sliced or chopped, put into freezer bags, and labeled.  It really doesn't get much easier than that. 

Thanks to Nick's help, it only took about two hours to turn fifty pounds of potatoes into the following:

2 1/2 gallons of steak fries
3 gallons of scalloped potatoes - 3 9x13" pans
4 gallons of twice-baked potato casserole - 4 9x13 pans
4 batches of my Crock Pot Potato Chowder  
5 quart bags of diced potatoes for Best Ever Stew

Looks pretty good, doesn't it?  I'm really pleased with how much we were able to get, and very thankful to have all that on hand.  I know potatoes aren't that expensive, but it really is a blessing to have them, especially with the holidays coming up!
